100% Chardonnay from Lodi
Winemaking Notes
Of course we cannot call it Champagne only the small region in northern France has the right to.
But don’t worry we used the exact same technique to create that wine! Blanc de Blanc or 100% Chardonnay Methode Champenoise
Méthode Champenoise means basically after making a dry chardonnay, we put the wine through secondary fermentation into a bottle instead of a tank , the same bottle you’re holding right now. Yeast is mixed with a certain amount of sugar and nutrients then bottles are filled with this mixture. Fermentation begins and carbonic gas cannot escape creating the famous bobbles that everybody loves!
Then we lay down each bottle for few years this step is essential to give time to flavors to develop…
We disgorged or removed the sediments from inside the bottles by freezing up and down each bottle neck, Pop! each capsule get replaced by a Champagne cork and cage spin 6 times and the lost wine gets top up by the same batch of wine containing only 5.65grams of sugar/Liter.
Tasting Notes
After opening you’ll notice intense apple characteristics, a hint of almond and brioches these are definitely flavors that take time to reach.With a smooth and creamy finish, conversation and atmosphere lead the evening as the bottle empties itself.
Extra Brut, dryer than Brut goes well by it self but in my opining sea food specially sushi or seared yellow tail collars make a fantastic match!
